In France they are known as Cerveaux

In France they are also known as Cervelles - I had forgotten that there was a feminine form of cerveaux, but after an unfortunate experience in a restaurant in Paris, it is not something I will forget again.

When I was 19, a group of us went to Paris. I was the only one of us who could remember any of their school French, so when we were in a restaurant I got to translate the menu. Naturally, one of our party went for the one thing on the menu that I had no idea what it was. I think you can work out the rest!
